O.K., If ya want to swap some really good cooking ideas and recipes. I'm in.

I will give y'all my "EXPRESSO CHEESECAKE RECIPE".
It's so good, and I have made it so often that I have it memorized.

here's what ya need....

Expresso Cheesecake.

2&1/2 cups of graham cracker crumbs.
2 tsps of almond extract.
1/2 cup plus 2 Tbsps of butter ~ melted.
12 oz of semisweet chocolate.
4~8oz packages of Phili cream cheese ~ softened.
3 eggs.
2/3 cup sugar.
1/2 cup milk.
2 tsps instant exspresso coffee powder.

Combine graham cracker crumbs, almond extract and butter ~Press mixture onto bottom and sides of of a 9'' by 3'' springform pan to within 1'' from the top of the pan; set aside.
Preheat oven to 350'F.
Melt 8 ounces (8 squares) of semisweet chocolate in a double boiler over low heat.
In a large bowl, beat softened cream cheese at a low speed til smooth.
Add melted chocolate, eggs, sugar, milk, and the exspresso coffee powder all together and beat till well blended.(beat 3 minutes at medium speed).
Pour cream cheese mixture into crust.
Bake 45~50 minutes.
Cool in pan on a wire rack if ya have one.
When completely cool, Cover, and refrigerate at least 4 hours.
Carefully remove cheesecake from pan and transfer it to a platter.
To garnish;
Grate the remaining 4 squares of semisweet chocolate over the top of cheesecake ~Or~ Make chocolate curls with a vegetable peeler and sprinkle over the top of your cheesecake that way.
It will serve about 20 people, and makes a great dessert while entertaining company.
Plus while it bakes and cools to set, you can get your place ready and yourself made up as well and then just enjoy your evening.

It is a great cake for a Christian Study Bible group evening.

Plus, It also makes a great "Cry & Gripe" party cake for when it's just you and your friends are together and talking about who did what to whom and why if thats your thing to do. wink

Christian huggles y'all!,
~Lyn~
