Kiki's lazy Butternut Squash Soup
I stick a butternut squash in the oven in high heat to roast it so that the skin is easier to peel off. Then I cut it into cubes. (Additionally, you could just buy precubed butternut squash pieces)
Add a knob of butter to the button of a large pot and add in several cloves of garlic and some diced onions. Fry them for a bit then add in the cubed butternut squash. Cover it with enough chicken stock (Or chicken bouillon cubes with water) and let it simmer for around 30 min, until everything is soft.
Also, you can sneak in extra veggies into it like red peppers, carrots, celery and spices like thyme and sage. But just onions garlic and butternut squash already make a very good basic soup. ><
Then blend the **** out of it with an immersion blender. Make sure you blend it a lot. i didn't blend it enough earlier and it doesn't have the same texture.
Add salt, pepper, curry powder to taste. And a knob or sour cream, cream, or milk if you want it to feel extraaa creamy.

Chocolate Pudding - Microwave.
Required - an 8inch microwave safe bowl/dish (Pyrex if you have it!)
4ounces (100g) butter/firm margarine. 2 Eggs. 7 teaspoons cocoa powder. 1 half cup plain flour 1 cup caster sugar
Melt the butter (cook on high for 1 minute) Stir in all the other ingredients to make a runny mixture. Cook on high for 4 minutes. Remove from microwave.
It may still look wet, but it will cook through a bit more while you wait for it to cool enough to eat.
Best served warm with ice cream
