Chocolate Fudge


Ingredients:
2 cups chocolate chips
1 can sweetened condensed milk
1/2 cup Copha
1 tsp vanilla extract

Instructions:
Place first three ingredients in a medium to heavy sauce pan.
Cook on lowest heat stirring constantly with metal spoon.
When all ingredients are melted change to a wire whisk.
Continue stirring until well mixed, smooth and creamy.
Add the vanilla at this time and blend in thoroughly.
You should now see the surface as slightly glossy.
Pour out, into a 9x9 inch pan lined with foil.
Place in a refrigerator for two hours or until firm.

Optional: You can powder the Chocolate Fudge Squares with Cocoa Powder.

Christmas Fruit Cake
(aka: Easy Fruit Cake)



Ingredients:
1 kl Mixed Fruit (purchased at the shops)
2 cups Apple Juice
2 cups Self Raising Flour
1 tsp Mixed Spice

Instructions:
Mix the fruit and apple juice and let soak over night, covered in the refrigerator.

Next day
Preheat over at 150°c

Mix in the Flour and Mixed Spice.
Double line a Loose Basedor Spring Form Cake Tin with baking paper.
Pour cake mix in and level out.
Place tin in centre of oven and cook for 2 ¼ to 2 ½ hours.
Keep watch in the last half hour, if cooking too fast cover with baking paper.
Cake is cooked when brown and a scewer comes out dry.
Cool completely before removing from tin.

Quantity:
Makes 1 standard size cake.

Notes:
You can have fun with this recipe, and add up to a cup of nuts of choice to the mixture. Or you can add extra spices, such as cardamom(yum), cloves, nutmeg, allspice.

For adults you can add an equal amount of Brandy, Rum or Cherry in place of Fruit Juice.

Easy Jam Cordial


When you have some jam but feel thirsty. Or when you have a flavour of jam you think would make great cordial.


Ingredients:
1 Jar Jam
2 Jars Water
1 Jar White Sugar
1 tsp Citric Acid

Instructions:
Place all ingredients in a medium saucepan.
Place over moderate heat and bring to a boil stirring constantly.
Make sure the jam and sugar has dissolved into the water creating a syrup.
Simmer until liquid becomes slightly thicker and the sugar has dissolved.
Strain through a fine mesh strainer to remover excess flesh and pulp.
Pour into a clean sealable bottle.
Seal and lay on side to help sterilise the top.
Refrigerate once cooled.

Ratio for the drink is 1 part cordial to 4 parts soda water.
