Christmas Fruit Cake
(aka: Easy Fruit Cake)
Ingredients:
1 kl Mixed Fruit (purchased at the shops)
2 cups Apple Juice
2 cups Self Raising Flour
1 tsp Mixed Spice
Instructions:
Mix the fruit and apple juice and let soak over night, covered in the refrigerator.
Next day
Preheat over at 150°c
Mix in the Flour and Mixed Spice.
Double line a Loose Basedor Spring Form Cake Tin with baking paper.
Pour cake mix in and level out.
Place tin in centre of oven and cook for 2 ¼ to 2 ½ hours.
Keep watch in the last half hour, if cooking too fast cover with baking paper.
Cake is cooked when brown and a scewer comes out dry.
Cool completely before removing from tin.
Quantity:
Makes 1 standard size cake.
Notes:
You can have fun with this recipe, and add up to a cup of nuts of choice to the mixture. Or you can add extra spices, such as cardamom(yum), cloves, nutmeg, allspice.
For adults you can add an equal amount of Brandy, Rum or Cherry in place of Fruit Juice.
