Something our coach got of one of the French athletes is to extend your arm so the tip's almost touching the ground. When they lunge at you, bring your arm up. Since you extended first, it's your right of way and you win every time.

I hate to break it to you, but that only applies with really old school refs, the new FIE rules don't explicitly define arm extension as the point at which an attack begins. It's now a combination of both extension and footwork, since this is a reactionary move and not the initiation of an attack I guarauntee you that 9/10 Refs will call it a counter attack...
You are reacting, not initiating, therefore it is not an attack. So unless your opponent has awful form and steps in without any arm motion at all, you will never get this called as an attack on preparation in your favour...
