Since cabbage is about to go on sale (St. Patrick's Day is not far off), here's a recipe for a very good and reasonably quick side dish.
1/2 medium head of cabbage
2 tbsp butter
1/2 tsp dried mustard
1/2 tsp onion powder
salt and pepper to taste
Cut the half head of cabbage into quarters, core, and slice thinly. I usually slice across the quarter, but any way that works for you is fine.
Melt the butter in a large, wide skillet over medium heat. Add the dried mustard and onion powder and cook for 30 seconds, stirring constantly, until fragrant.
Add the cabbage and turn to coat in the butter mixture. Continue cooking the cabbage over medium heat until it is wilted, soft, and the edges on about half the slices are starting to turn brown from cooking (that equates to flavor!), turning occasionally. You have to let it set and cook in between turns to get the browning!
Salt and pepper to taste and serve.
You can alter the seasonings but I like the mustard/onion combination.
It's easiest to stir/turn this dish while it's cooking with a pair of tongs.
