Ok, so techinically this recipe isn't even vegetarian, but it becomes vegan with just a few tiny changes. Sub oil for the butter, use a whole can of coconut milk and leave out the condensed milk (and add sugar to taste), and use vegetable broth (duh). This is a wonderful soup. As always with Epicurious, read all the comments, because the advice is REALLY worth it!
