This isn't so much a formal recipe as a method, a good way to get curry flavor when you don't want to make a whole curry. It's great for summer when you don't want to heat up the kitchen.
2 boneless skinless chicken breast halves
2 tsp curry powder
salt and pepper
2 tbsp olive oil
Coat each chicken breast with curry powder, salt and pepper to taste, then drizzle each one with 1 tbsp olive oil. Let sit for at least 15 minutes, up to a couple of hours, to let the curry powder adhere to and flavor the chicken.
Heat your grill to medium and grill the chicken until the juices run clear. Or broil if you don't have a BBQ grill. You can bake it, too, if you like - 350F for about 20 - 25 minutes.
Makes two servings.
You can cut each chicken breast into slices and serve over greens for a light salad meal.
