Now while I do not know everyone's heart gifts, this is what I do know for certain.
Ann - corn/rare ores
Michael - potatoes
Carl - eggs
Katie - cocoa
Doug - corn
Gwen - jam except orange jam
Tim - pudding
Tai - Rare ores (get them in winter)
Ray - Moonstone
Louis - moonstone
Bob - silver ore
Hank - gold ore
Blue - amethyst
Ellen - cocoa
Joe - Manieures and grilled R Trout
Kurt - tomato juice and blue mist flowers
Woody - star milk
Terry - mushrooms (do not give him a toadstool.)
Mayor - potatoes
Saibara - good clay
Alex - high quality turnip (he says he feels undeserving of something so fine)
Martha - yarn
Dia - blueberry jam/juice
Gina - not sure of what she loves, but my guess would be the same as Alex.
Ronald - grape anything
Dan - apple stuff
Henry - dyed yarn
Lyla - flowers
Girl who lives with Dan and Ronald - High Quality Strawberries
Jamie - cakes
Eve - Sodas
Duke - not sure but not ores
Gormet - star milk
Nami - tomato juice
Basil - red herbs and potana roots.
Lily - flowers
Other girl that lives at the plant shop - moonstones
Maria - High Quality cabbage
And from this info, yes I have unlocked everyone in the past. So I know who is who. I have technically passed the game before in getting all 100 notes, and I know what everyone loves too.

Actually, Dan loves Grapes. He said and I quote him, "Ya-ha! You know my preferences Choco Kitty, I love ya!"
That's what happened when I gave him a grape.
When I give him apple stuff, he says, "How am I supposed to repay your kindness." This means its a like gift.

Duke and Eve love sodas. You must have the aging pot and two of one kind of fruit to do this.
Whether it be grapes, very berries, apples, oranges...errr... I think you can make orange soda... or maybe blueberries too.
I know for sure there is grape, apple, and very berry sodas.
I never tried it with strawberries. Could someone try that and tell me if it worked?
