Favorite accoustic one is hard. most songs aren't 100% accoustic. But some old stuff from Ayreon and Anthony are my favorites i think.
And my favorite instrumental is Reality Dream III from Riverside. 3nodding

It's not ENTIRELY acoustic, but "Harvest" by Opeth is still one of my favorite songs of all time. Well, of right now, at least. =D

For acoustic, Opeth's Benighted is beautiful, even though it'd not entirely acoustic.
For instrumentals, I haven't the slightest clue. There are way to many to name.

I'm not entirely sure about prog acoustics, but I absolutely love the classical guitar parts in Jethro Tull's "A Passion Play".
As for instrumentals, that's a tough question. At the moment, I'm thinking "Greet Death" by Explosions In The Sky. "Reality Dream III" is also excellent, though. But I have to say, I've never been too crazy about Opeth.
