The southern roofs face out mostly twords a few spots of forest, a nice empty patch o' lawn, and sights of the Quidditch Pitch. To your left, the Forbbiden Forest as well as Hagrids Hut, the North is more rooftops, the courtyard, and direction twords the lake, and to your right is the front enterence. If you where to try to figure out your general location walking from the left to the right upon the roof, it would be something of the following:
In the left corner ends the steep planes of the East roof with another one of those cool tower-but-not-really-a-roof-top things- ya know, with the square cuts of stone that where discribed horribley in the North Side Section? From there are lots of fun, randomly preportioned cone shaped tops that you can jump top-to-top from. Ms. Karen Hurst's office is no doubt in one of these squashed towers, as she's seen atop a particular one every now and again.
After a few meters of barely sloped roof with a perfect crease of the two sides (used by many as a bridge between the chaos) lies Gryffindor tower. This time, instead of having books being thrown at you, you'd most likely have Exploding Snaps nipping at your ankles. Only tred upon this place if you are Gryffindor yourself, or have someone to back you up.
Past that scary territory, a few randomly layerd shingle floors lead the way to the West tower, belonging in, of course, the western region.
