Everything.... I still want to do everything.
A little part of me still hasn't given up on world domination.
But seriously I will probably be a scientist or analyst of one flavor or another. (about to finish up my masters and those seem to be the main positions I am qualified for).

Robotics (specialism off Engineering Sciences).
I'm going to a Robotics summer school in London in summer (obviously), which should hopefully tell me if I like it or not. ^_^

I want to be a Latin High School teacher. Eventually, I want to break into education politics and work on education reform.
I also want to be an author an a performer, as well as a small business owner.

I'm looking at being a linguist maybe, depending on how much language knowledge I can acquire before the end of high school.
I also considered pediatrics and writing novels.

Already grown up and am currently a software QA analyst, though I've been a college-level instructor and a programmer in the past.
If I could to do it all over again, I'd pursue what I originally wanted to do but really had no idea how to go about it. I'd be a conservation scientist, or at least that's the label they give the job. A conservation scientist is a person who studies art and art history on the chemical level -- partially to come up with new ways to preserve artworks (thus the name of the job), but also to find out how artists did what they did.
As an example, recently, conservation scientists discovered that the pigments used by Venetian Renaissance painters, whose colors were renowned for their luminescent quality, contained ground glass. The discovery was made in part when one of the scientists, while researching records of purchases made in Venice, found a list of supplies purchased by an artist that included ground glass. Corroborating evidence was found by conservation scientists taking microscopic samples of pigments from artworks and analyzing them -- depending on the pigment, it contained different types and colors of glass particles.
