Leaves contain a chemical called Chlorophyll which absorbs light to convert to energy for the plant. Chlorophyll is poor at absorbing light from the green part of the spectrum and thus it is reflected, giving leaves their green color.

Cinnamon is actually a small evergreen tree, and it's bark is commonly used as a spice known by the same name (cinnamon).
