I typed a huge long paragraph, said no one will want to answer that, so I turned it in to a better format...
-Can berries be used to fix EVs? -Which is easier? Using berries to fix EVs or breed and start over? -Does the Pokemon have to be the one to knock out the opponent to get the EV points, or do they just need to get experience? Or can I just stick an exp share on it?

Yes berries can change them. Only one kind, I think and it lowewrs the EV's. I think It would be eiser to use a berry one someone that is a high level but if you just had an EXP. Share on somebody and killed the wrong pokemon then use a berry. No, the pokemon you want to gain EV's doesn't have to knock out the opposing pokemon. If they do have EXP. Share or you swich pokemon during the battle the EV's are simply split between the two.
Example-
Abra has exp. share and you use charmander to kill a pokemon with a 2 point EV for atk then each pokemon will get 1 EV (abra and charmander)
Also if You send out abra at the beging to kill that pokemon and no one else then abra will get 4 EV instead of the 2 if it's holding EXP. Share.

I hope that helps. Actually, EV's are COPIED to each pokemon, and not split. everyone who gets regular EXP from a battle gets the full amount of EV's

Yeah, so if you have an abra with EXP.shar, and a charmeleon for fighting,
If the charmeleon fights a linoone for 2 speed, and the exp.share adds some exp. to abra, both will get 2 speed EV's.
if abra's in front and is switched out, nothing about EV's changes. abra will just get 75% of the EXP, and both will get 2 speed ev's.
if charmeleon has macho brace it gets 4 speed EV's, but abra still only gets two.
in short, the rule is: everyone who gets EXP gets the exact amount of EV's the defeted opponent gives. anyone with pokérus or macho brace doubles what they get. anyone with both gets four times the original EV's
