I had this a couple weekends ago and it is awesome! Not a diet friendly recipe! I always tweak recipes so I made a batch, you can see my notes in blue.
Buffalo Chicken Dip

INGREDIENTS
* 2 (10 ounce) cans chunk chicken, drained -I like shredded chicken breast better...
* 2 (8 ounce) packages cream cheese, softened -can sub light
* 1 cup Ranch dressing - can sub light
* 3/4 cup pepper sauce, such as Franks® Red Hot® -adjust to taste/spicy tolerance..safer to start with less...
* 1 1/2 cups shredded Cheddar cheese -can sub light
* 1 bunch celery, cleaned and cut into 4 inch pieces
* 1 (8 ounce) box chicken-flavored crackers
- I just served with tortilla chips...but celery etc is healthier mrgreen
DIRECTIONS
1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
-instead of this method, I found another. Just mix all together the softened cream cheese, cooked chicken, dressing, sauce, 1 C cheese, etc...in a caserole or baking dish. sprinkle remaining cheese on top and bake on 350° until bubbly...serve warm.
