Haven't read enough of Elfin Lied to make a comparison, and never read the other two.
However, here's a plot sum for Fate/Stay Night:
Shirou Emiya has a knack for fixing things. The reason for this is that his ability to fix things is the lone talent of a mage, and he must be careful that he doesn't have people getting suspicious.
However, things do always go peachy-keen for this guy. One night, he finds himself under attack by a strange man weilding a lance. While hiding from this attacker, he ends up summoning someone else - an armored blonde who calls herself "Saber," and him "Master." After being defended by this woman, Emiya is indoctrinated in the event of the war for the Holy Grail by Rin and one other guy (I don't remember his name).
The war runs like this:
Each mage summons one of seven warriors (called "Servants"), and the servant and master fight to eliminate all other servants/mages. When a servant or mage is eliminated, the corresponding servant/mage is also eliminated. The last ones standing get a wish - any wish - granted by the Holy Grail.
Oh, and while we're at it..."Saber"-class is the strongest class of servant....
The series chronicles the War of the Holy Grail that involves Emiya.
