Anybody know where I can get some good chocolate recipes? I mean like the stuff you'd buy at Godiva, but to make at home. Truffles and such. Any ideas or recipes?

Chocolate Truffle
1/4 cup heavy cream 8 oz chocolate broken into small pieces 6 Tbsp unsalted butter cut into small pieces
Scald the cream and pour over the chocolate and butter. Stir until everything is all melty and mixed. Pour the chocolate mixture into a shallow bowl, cover and let it sit until it's firm.. at least 2 hours, I usually let it sit overnight, just to be sure. After you've let it set, prepare either a shallow dish filled with cocoa powder, or melt some chocolate over double boiler.. depends on if you want cocoa covered truffles, or truffles with a harder chocolate shell. Use a spoon or scoop to scoop out roughly 1 inch balls of the truffle mixture. You can shape them a bit with your hands, and for that I'd recommend using surgical gloves, since that stuff will get everywhere. Once you shape them you can either roll them in cocoa or dip them in melted chocolate. Then you're done! Store them in an air tight container for a MAX of 2 weeks.. personally I'd only go 1.. dairy and all. Enjoy!
