These are soooo good!
I usually make my own dough, but you can use any pre-made dough to create your calzones.
These took me quite a while to make, but that's because I'm one of those crazy a**l people who makes everything from scratch, but these are great since you can freeze them and eat them as a simple dinner for a few weeks after you make them.

Ingredients
1 Tablespoon Olive Oil 20oz (1.25lb) fresh broccoli 4 cloves garlic 1/4 Teaspoon red-pepper flakes Flour for rolling dough 2 lbs fresh or frozen pizza dough 1 Cup part-skim ricotta cheese 1/2 Cup grated Parmesan Cheese 1 1/2 Cups shredded part-skim Mozzarella Cheese Coarse Salt and Ground Pepper (to taste) 1 medium red onion finely chopped Tomato Sauce (Optional, Fresh or Prepared)
Tools Large Skillet Medium bowl Large Cutting Board Baking Sheet Wax Paper Wide Spatula Paring Knife
-You can substitute frozen broccoli for fresh, but let it thaw first before adding to the sautee.

Directions
1. Using your Large Skillet, heat oil over medium heat. Add onion to heated oil, cook until softened (roughly 4-5 minutes). Add broccoli, garlic, and pepper flakes. Cook the mixture, occasionally stirring until liquid has evaporated (roughly 5-7 minutes). Remove from heat, set aside to cool.
2. Preheat oven to 400 degrees. Divide dough into 8 equal pieces (16 for smaller calzones). On a lightly floured large cutting board, stretch each piece out into 6x8 ovals (let the dough rest a few minutes if too elastic).
3. Stir Cheeses (Mozzarella, Ricotta, and Parmesan) into cooled Broccoli mixture; season with salt and pepper (to preference). Spread rounds of about a 1/2 cup of broccoli cheese mixture over half of each piece of dough, leaving a half inch border along the outer edge. Fold over other side of dough to create a half-moon shape calzone. Press edges to seal. With a paring knife, cut 2-4 1/2 inch slits in the top of each calzone.
4. Using a wide metal spatula, move calzones onto baking sheet with parchment or waxed paper, reshape if desired.
5. Bake until golden (roughly 25 minutes) Serve with Tomato sauce (or lather it! It's really good).
6. To reheat, it's about 3 minutes on defrost for my microwave. You can also reheat in the oven, but it is difficult to heat thoroughly in a short amount of time.

If you don't like Broccoli could you replace it with meat or something elseif your not a vegetarian? 3nodding
