Here is where we can share our favorite recipes.. I am trying a new pasta salad tomorrow for BBQ at the Inlaws........ If it goes over well I will post the recipe!!

Italian Pasta Salad
4 cups cooked Penne Pasta
3 med tomatoes cut up (I used the organic vine ripened cherry tomatoes and I cut them up in quarters..)
1 8oz package Italian Cheese Crumbles
1/4 cup fresh basil sliced
1/4 tsp black pepper
dash of salt
1/4 - 1/2 cup Kraft Zesty Italian Dressing

Cook pasta per package directions rinse with cool water, in large bowl add all ingredients and toss. Serve chilled....
I added fresh Parmesean just before serving and it was delish!!!

Other variations: You can add cubed salami, chopped red onion, marinated mushrooms, olives, or whatever you want really/.... but is was great just the way I made it above.....

Here is a recipe that I came up with when working at a deli with my boss and it i so gooooood and tasty!!!

Basil Chicken Salad

ingredients:
6 Boneless Skinless Chicken breasts
1/2 cup fresh chopped basil (you can add more or less depending on taste.)
juice of 1 lemon
enough mayo to moisten or to your desired consitency
salt and pepper to taste.

Bake chicken breast in oven till done. when done allow to cool then dice into bite size pieces. add basil lemon juice mayo stir to coat chicken with mayo then salt and pepper to taste.

This can be enjoyed as a topper to green salad or on a sandwich.. Or you can eat it all by itself....

Lemon Bars
CRUST
• 1 cup all-purpose flour
• 1/3 cup butter, softened
• 1/4 cup confectioners' sugar
• TOPPING
• 1 cup sugar
• 2 eggs
• 2 tablespoons all-purpose flour
• 2 tablespoons lemon juice
• 1/2 teaspoon lemon extract
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt
• confectioners' sugar
DIRECTIONS
1. Combine the flour, butter and confectioners' sugar; pat into an 8-in. square baking pan. Bake at 375 degrees F for 15 minutes.
2. Meanwhile, in a large mixing bowl, combine sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust.
3. Bake for 18 to 22 minutes or until light golden brown. Dust with confectioners' sugar.

I have made these a couple of times and they are really good. I have to readjust the temperature and baking time for my oven though to 350 degrees and about 10 min. Enjoy!

This Recipe is to die for!


Fried Peanut butter and Banana Sandwiches


1/2 cup butter, softened
3/4 cup crunchy peanut butter
3 tablespoons honey
1 1/2 teaspoons ground cinnamon
2 to 3 ripe bananas
8 slices white bread
Topping:
1/4 cup sugar
1 tablespoon ground cinnamon



In a frying pan, melt 3 tablespoons of the butter. Make sure butter does not burn. In a small bowl mix together the peanut butter, honey, and cinnamon. Slice the bananas into 1/4-inch thick slices. Spread the peanut butter mixture on 4 slices of bread and cover with banana slices. Top with the remaining 4 slices of bread. Spread the remaining butter on both sides of the sandwiches. Grill the sandwiches in the frying pan until each side is golden brown.
For topping, combine the sugar and cinnamon in shallow plate. Coat the grilled sandwiches with the mixture. Cut diagonally and serve hot.
