This is the thread for all those little tips and tricks of the trade.

I'll start:

Peeling/skinning tomatoes:
Start by cutting the core, turn the tomato over and slice an "x" in it, about one quarter into it. Boil it for about 20-25 secs in boiling water. Quickly transfer it to ice until you can handle the heat. Peeling should be easy as pie!......tomato pie!

i know that. cool but do you know how to brine a turkey?

10-15 seconds in boiling water should do.

i know that. cool but do you know how to brine a turkey?


make the brine with salt and water, you could try 1/2 cup per gallon, I always estimate til it tastes good, can add in aromatics like bay leaf, peppercorns, garlic. You could even add honey, I like to add liquid smoke, that way the turkey tastes like kalua turkey(if you live in HI) you know what I mean, brine for 24 hrs, then roast like regular.

Cooking with Wine and Beer

• The addition of wine to soup frequently enhances its flavor, but do not over salt soups to which wine is added, as wine intensifies saltiness.

• Add the wine after the initial cooking period, when it is in the simmering stage, to allow the alcohol to cook off and the flavor to integrate.

• Beer adds a tang to bean, cabbage and vegetable soups. Use 1 cup for every 3 cups soup.

• Add the beer at room temperature, just before serving. Heat the soup through, but do not boil.

stir fry... step1 cut everything and measure everything and get ready
step2 heat wok or skillit...
step 3 and the biggest things first stir stir stir
step4 add the small things stir stir stir
if your using a sauce add as much as you want...
step5 eat
step6 get yelled at for eating the customers food...
